Corn on the Cod – Easy Fish recipe in savory miso sauce

Ingredients

  • 1 cup low sodium chicken stock
  • 4 tbsp miso
  • 4 cloaves fresh garlic
  • 1/2 cup whole kernel corn (no salt added variety)
  • 2 tbsp malt vinegar
  • 2 cod fillets (5 oz each)

Instructions

  • In two small baking dishes, combine half of the chicken stock, miso, and malt vinegar. Mix ingredients until all one consistency.
  • Place one cod fillet in baking dish and surround with garlic slices. Bake at 300 F / 150 C for 15 minutes. Flip fillets and bake for another 10 minutes.
  • Top fillets with corn and bake for another 10 minutes.
  • Top with ground pepper. Serve in baking dish.

    1. Mostly specialty markets. Chinese markets are the best place to find miso but it is slowly making its way into mainstream grocery stores. Of course, there is always Amazon.
