Ingredients
  

  • 10 oz barbecue Jackfruit
  • 1 can no-salt added black beans (14.5 oz)
  • 1 bell pepper (yellow or orange)
  • 2 tbsp cumin powder
  • 2 cups vegetable stock (low sodium)
  • 1 white onion (medium)
  • 1 cup crushed tomatoes
  • 1/2 tbsp crush red pepper flakes
  • 2 oz vegan chocolate
  • 1/2 cup brewed coffee

  • Add more water if you want a thinner sauce.
  • Add more habanero peppers if you want it spicy.
    ( As a lover of spicy chili, I use 4 or 5 peppers )

Veggie chili recipe is born

From time to time, I enter chili competitions and I make it point to taste-test other recipes. As a result, I get to taste a wide variety of chili recipes. For the most part, vegetarian chili recipes in these competitions are lack luster and underwhelming. To put it another way, they suck. For some unknown reason, the cooks forget to create a recipe that looks like, tastes like and embodies the spirit of chili. For this reason, I decided to create a recipe that was both 100% vegan and worthy of being called chili.

Secret ingredients

Generally speaking, all chili cooks have their “secret ingredients” and this recipe is no exception. Smokey Jackfruit chili includes coffee, red miso and vegan chocolate. You will have trust us on this point but these ingredients make a huge difference. In fact, I am willing to say this is what impresses the judges, even though they are often unaware of these three ingredients. Regardless, I judge by the smiles on the faces of my guests.

Conclusion

The first thing to remember is I am not a vegan or even a vegetarian. On the other hand, I am a chili lover. With this in mind, I set out on a culinary journey to create great vegan chili. Specifically, vegan chili that is worthy of the name “chili”. In a word, I succeeded. Moreover, Jackfruit chili is a nutritional powerhouse.     1. That is a decent question. How can you tell whether it tastes good or not just from viewing it on a website? So Keirsten I will try to verbally describe the taste. First, is the smell. The chili smells beefy, bold and rich as it cooks. That beefy, tomatoey, brothy, spicy smell permeates the kitchen. That is one reason I love to cook this in a slow cooker. Now, for the taste. With the first spoonful you taste a beautiful musky taste coming from the cumin powder and a rich broth taste coming from the tomatoes and broth. Then the spices “kick in” and there is a momentary spicy burn in your mouth. Followed by a bold savory taste created by the combination of coffee and miso. All in all, this recipe tastes every bit as good as great chili recipes.
