  • 4 large hard-boiled eggs
  • 0.5 medium Hass avocado
  • 1 Tbsp light mayonnaise
  • 1 Tbsp plain yogurt
  • 0.5 tsp finely chopped chives
  • 2 tsp red wine vinegar
  • 0.5 tsp Kosher salt
  • 0.25 tsp freshly ground pepper

Method
 

Preparation Steps
  1. Combine the egg yolks with the avocado, light mayo, yogurt, chives, vinegar, salt and pepper in a medium bowl.
  2. Mash with a fork until smooth.
  3. Chop the hard-boiled eggs and add to the mixture, then gently combine and season to taste.

Notes

Serve on toast, in a lettuce wrap, or with fresh vegetables for a healthy meal.
