  • 12 oz uncooked ziti
  • 28 oz crushed tomatoes preferably Tuttorosso
  • 1 tsp olive oil
  • 3 cloves garlic minced
  • 10 oz frozen spinach thawed
  • 1 tsp oregano
  • 2 tbsp chopped fresh basil
  • kosher salt and fresh pepper to taste
  • 8 oz fat-free ricotta
  • 0.25 cup grated Parmesan cheese
  • 2 cups shredded part skim mozzarella about 8 oz, recommended Polly-O
  • olive oil cooking spray

Method
 

Preparation Steps
  1. Preheat oven to 375°F. Spray a 9x13-inch baking pan with olive oil spray.
  2. Cook pasta in salted boiling water until al dente, about 2-3 minutes less than package directions. Drain and set aside.
  3. In a medium saucepan, sauté garlic in olive oil over medium heat until fragrant. Add thawed spinach, salt, pepper, crushed tomatoes, basil, and oregano. Cook for about 5 minutes.
  4. Mix cooked pasta with the sauce mixture. Fold in ricotta, Parmesan, and half of the mozzarella. Transfer to the prepared baking pan.
  5. Top with remaining mozzarella cheese. Cover with foil and bake for 30 minutes until cheese is bubbly and browned on top. Let cool for 5 minutes before serving.

This baked ziti recipe is easy to prepare and perfect for a family dinner. You can add cooked ground beef or sausage for extra protein.
