  • 2 pounds ground beef
  • 0.5 cup chopped onion
  • 0.5 cup chopped green bell pepper
  • 2 tablespoons taco seasoning
  • 1 can red enchilada sauce
  • 8 tortillas flour tortillas (8 inch)
  • 3 cups shredded cheddar cheese

Method
 

Preparation Steps
  1. In a large skillet over medium-high heat, cook ground beef with chopped onion and green bell pepper until beef is browned and vegetables are tender, about 8 minutes. Drain excess grease if needed.
  2. Add taco seasoning to the beef mixture and cook for 1 minute, stirring well.
  3. Stir in half of the enchilada sauce and salt to taste. Spread a thin layer of enchilada sauce in a 9x13-inch baking dish.
  4. Spread about 1/3 cup of beef mixture along the center of each tortilla, top with a sprinkle of cheese, then roll up and place seam side down in the dish.
  5. Repeat with remaining tortillas and beef mixture. Pour remaining enchilada sauce over the top, then sprinkle with remaining cheese.
  6. Bake uncovered in a preheated oven at 425°F for 20-25 minutes until cheese is bubbly and golden.

Notes

Serve hot with optional toppings like sour cream, sliced jalapenos, or chopped cilantro.
