  • 0.5 cup unsalted butter (softened)
  • 0.5 cup brown sugar
  • 0.5 cup granulated sugar
  • 1 pcs Egg
  • 1 tsp pure vanilla extract
  • 1.25 cups flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 0.5 cup quick oats
  • 1 cup mini chocolate chips
  • 1.25 cups crushed Cadbury mini eggs (divided)

Preparation Steps
  1. Preheat the oven to 350°F. Line baking sheets with parchment paper.
  2. In a stand mixer, beat softened butter, brown sugar, and granulated sugar until creamy.
  3. Add egg and vanilla extract; beat until smooth.
  4. Gradually mix in flour, baking soda, salt, and oats on low speed.
  5. Stir in chocolate chips and 1 cup of crushed Cadbury mini eggs with a spatula (don’t overmix).
  6. Use a 3 tablespoon cookie scoop to place dough on baking sheets, about 3 inches apart.
  7. Bake for 8 to 9 minutes or until edges are golden brown.
  8. Sprinkle remaining crushed Cadbury mini eggs on top of warm cookies.
  9. Allow cookies to cool on baking sheet for 10 minutes. Serve and enjoy!
