Ingredients

  • 1 cup white rice
  • 1 cup cashews
  • 1 lb boneless skinless chicken breasts
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 cup broccoli florets
  • 1 each red bell pepper, sliced
  • 1 tablespoon vegetable oil

Method
 

Preparation Steps
  1. Cook rice according to package instructions. Set aside.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add diced chicken and cook until no longer pink, about 5-7 minutes.
  3. Add garlic and ginger to the skillet and cook for 1 minute until fragrant.
  4. Add broccoli and red bell pepper to the skillet. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  5. Mix soy sauce and hoisin sauce in a small bowl. Pour over the chicken and vegetables. Stir to combine and cook for 2 minutes.
  6. Add roasted or raw cashews to the skillet, mixing well. Serve the stir-fry over cooked rice.

Notes

Feel free to add other vegetables like snap peas or carrots for variety.
