  • 1 head cauliflower
  • 2 cups shredded cheddar cheese sharp
  • 1.5 cups milk whole or 2%
  • 0.5 cup Greek yogurt plain and unsweetened
  • 0.25 cup all-purpose flour
  • 2 tablespoons butter unsalted
  • 1 teaspoon garlic powder
  • 0.5 teaspoon mustard powder
  • 0.5 teaspoon black pepper freshly ground
  • 0.5 teaspoon salt

Method
 

Preparation Steps
  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Cut cauliflower into small florets and steam or boil until tender, about 8 minutes. Drain well.
  3. In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until lightly golden.
  4. Slowly whisk in milk and cook until sauce thickens, about 5 minutes.
  5. Remove from heat and stir in shredded cheddar, Greek yogurt, garlic powder, mustard powder, salt, and pepper until smooth.
  6. Combine cauliflower florets with cheese sauce and transfer to prepared baking dish.
  7. Bake uncovered for 20 minutes or until bubbly and golden on top. Let stand 5 minutes before serving.

Notes

For a richer flavor, try adding a sprinkle of paprika or a dash of hot sauce before baking.
