- Add diced rotisserie chicken, thawed peas & carrots, and the cream of chicken soup. Stir to combine.
- Slowly pour in chicken stock and stir until smooth and fully blended.
- Bring the mixture to a low boil. Add the potato gnocchi and reduce heat to medium-low. Simmer for 10-15 minutes, stirring often.
- After cooking, remove from heat and garnish with additional thyme leaves if desired.
