  • 4 pieces boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 0.5 cup capers rinsed
  • 1 lemon lemon juice freshly squeezed
  • 4 tablespoons butter
  • 1 clove garlic minced
  • 0.25 cup flour for dredging
  • Salt & pepper

Method
 

Preparation Steps
  1. Pound chicken breasts to an even thickness. Season with salt and pepper. Dredge in flour.
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown and cooked through, about 4 minutes per side. Remove and set aside.
  3. In the same skillet, add garlic and cook until fragrant. Add chicken broth, lemon juice, and capers. Bring to a simmer.
  4. Whisk in butter until sauce thickens slightly. Return chicken to skillet and spoon sauce over.
  5. Serve chicken topped with sauce, garnished with lemon slices if desired.
