  • 19 ounces frozen cheese tortellini cooked according to package directions and drained
  • 2 cups rotisserie chicken shredded
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 1 jalapeno pepper seeded and finely chopped
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14.5 ounces, drained
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • 0.5 teaspoon pepper
  • 2 cups heavy whipping cream
  • 0.25 cup parmesan shredded
  • 0.25 cup Romano cheese shredded
  • 0.33 cup fresh basil chopped

Method
 

Preparation Steps
  1. In a Dutch oven over medium heat, add olive oil.
  2. Once oil is hot and sizzling, add onion and jalapeno and cook until tender, about 5 minutes.
  3. Add garlic and cook for 1 minute.
  4. Add tomatoes, Italian seasoning, salt, and pepper. Cook and stir for 2 minutes.
  5. Stir in cream and bring to a boil.
  6. Add cooked tortellini, shredded chicken, and cheeses; heat through.
  7. Top with basil before serving.
