  • 1 lb chicken breast boneless, skinless, cut into bite sized pieces
  • 2 cups zucchini sliced thinly
  • 1 cup shredded mozzarella cheese
  • 0.5 cup Parmesan cheese grated
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground

Method
 

Preparation Steps
  1. Preheat oven to 375°F (190°C). Lightly grease a 9x9 inch baking dish with olive oil.
  2. In a bowl, toss the chicken pieces with garlic powder, salt, and pepper until evenly coated.
  3. Layer the bottom of the baking dish with half of the sliced zucchini.
  4. Arrange the seasoned chicken over the zucchini layer.
  5. Top chicken with remaining zucchini slices, then sprinkle mozzarella and Parmesan cheese evenly over the top.
  6. Drizzle olive oil over the top and bake uncovered for 30 minutes, or until chicken is cooked through and cheese is golden.
  7. Remove from oven and let cool 5 minutes before serving.

Notes

This casserole is great for meal prep and leftovers reheat well. Feel free to add herbs like thyme or oregano for added flavor.
