  • 2.5 cups all purpose flour
  • 2.5 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter room temperature
  • 1.5 cups granulated sugar
  • 0.25 cup vegetable oil
  • 2 tsp coconut extract
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1.25 cups coconut milk
  • 0.5 cup shredded sweetened coconut

Method
 

Preparation Steps
  1. Preheat oven to 350°F. Grease three 8-inch cake pans and line with parchment paper.
  2. Combine flour, baking powder, and salt in a bowl; set aside.
  3. In a large bowl, beat butter, sugar, oil, and coconut extract until fluffy, about 3 minutes.
  4. Add eggs one at a time, mixing well after each addition. Scrape down sides of the bowl.
  5. Add half of dry ingredients and mix. Then add coconut milk and mix.
  6. Add remaining dry ingredients and mix until smooth. Divide batter among pans.
  7. Bake for 20-25 minutes. Cool in pans for 10 minutes, then transfer to wire racks.
