Preparation Steps
- Add the heavy cream, eggs, baking powder, paprika, sugar, salt, and black pepper to a large bowl. Mix with a fork until combined.
- Add the corn. Mix until fully incorporated.
- Add the flour, cornmeal, and parmesan cheese. Mix until fully incorporated.
- Heat 1 tablespoon of avocado oil in a large sauté pan over medium heat.
- Scoop 0.25 cup of batter into the pan. Spread with the back of a spatula until flat.
- Cook for 2-3 minutes per side or until golden brown. Flip and cook other side.
- Transfer to paper towels or a clean towel. Sprinkle with salt if desired.
- Repeat with remaining batter, adding more oil as needed.
- Garnish with sour cream and chopped green onions, if desired.
Notes
These corn fritters are crispy on the outside and tender on the inside. Serve hot with your favorite dipping sauce or a dollop of sour cream.
