Preparation Steps
- Preheat oven to 350 degrees. Beat eggs with sugar until light and thickened, about 5-7 minutes. Mixture should form a ribbon when lifted. Do not skip this step as eggs act as leavening.
- Add softened butter and vanilla; mix for 2 more minutes. Stir in flour until just combined. Fold in cranberries evenly.
- Spread batter into a buttered 9x13 inch pan. Bake for 40-50 minutes until lightly browned and a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely before slicing into small pieces, about 1x2 inches. Serve and enjoy!
