Preparation Steps
- Preheat oven to 400°F. Spread bacon slices on a rimmed baking sheet and bake for 16-18 minutes until crispy. Remove and drain on paper towels.
- While bacon is cooking, peel and chop potatoes. Toss potatoes in bacon grease on the same baking sheet, season with salt and pepper, and bake for 20 minutes. Stir and bake another 20 minutes, then stir again and bake for an additional 15 minutes.
- Chop cooked bacon into small pieces. Remove potatoes from oven, sprinkle with shredded cheese and bacon pieces. Return to oven for 2-3 minutes until cheese melts. Garnish with sliced green onions and serve.
