  • 0.5 pound bacon
  • 3 large russet potatoes peeled and chopped into 1/2-3/4 inch pieces
  • 1 teaspoon kosher salt
  • 0.75 teaspoon freshly ground black pepper
  • 1.5 cups shredded cheddar cheese
  • 3 stalks green onions sliced thin

Preparation Steps
  1. Spread the bacon strips across a large rimmed baking sheet and place in a cold oven. Set the oven to 400°F. Bake for 16-18 minutes until crispy. Transfer to paper towels to drain.
  2. Peel and chop the potatoes into 1/2 to 3/4 inch pieces. Toss potatoes in the bacon grease remaining on the sheet, sprinkle with salt and pepper. Spread in a single layer and bake at 400°F for 20 minutes, stirring halfway, then bake an additional 20 minutes.
  3. Remove the cooked bacon and chop into small pieces. Remove the potatoes from the oven, sprinkle generously with shredded cheese and bacon. Return to oven for 2-3 minutes until cheese melts. Garnish with sliced green onions and serve.
