  • 0.25 cup frozen edamame, shelled
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce or tamari
  • 1 tbsp sesame oil optional for flavor
  • 1 cup mixed vegetables (carrots, peas, corn) fresh or frozen
  • 2 green onions scallions, sliced

Method
 

Preparation Steps
  1. Heat sesame oil in a large wok or skillet over medium-high heat. Add minced garlic and cook for about 30 seconds until fragrant.
  2. Add mixed vegetables and cook for 2-3 minutes until tender.
  3. Stir in the cooked rice and shelled edamame, mixing well. Cook for another 2-3 minutes to heat through.
  4. Add soy sauce and sliced scallions; stir to combine. Cook for 1 more minute.
  5. Remove from heat and serve immediately, garnished with extra scallions if desired.
