  • 1 cup light brown sugar
  • 1 large egg
  • 0.25 cup molasses
  • 2.25 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon salt
  • 0.5 cup granulated sugar for rolling the cookies
  • 1 teaspoon cinnamon for rolling the cookies
  • 1.5 cups white chocolate melting wafers for dipping the cookies

Method
 

Preparation Steps
  1. Preheat oven to 375°F. Line baking sheet with parchment paper and set aside.
  2. Combine butter and brown sugar in a large mixing bowl. Beat until fluffy. Add egg and molasses, mix well.
  3. Add flour, baking soda, cinnamon, ginger, cloves, and salt. Mix until combined.
  4. Use a cookie scoop to shape dough into balls. Roll each ball in cinnamon sugar mixture and place on prepared baking sheet.
  5. Bake for 8 minutes or until edges are firm. Cool on baking sheet for 2 minutes, then transfer to wire rack to cool completely.
  6. Melt white chocolate according to package instructions. Dip half of each cooled cookie into melted chocolate and place on parchment paper to set.
