  • 4 ounces wild salmon fillets
  • 0.25 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 0.25 cup chopped red onion
  • 1 tablespoon balsamic vinegar
  • 2 medium vine ripe tomatoes
  • 2 small garlic cloves (minced)
  • 2 tablespoons chopped fresh basil
  • 4 ounces diced avocado

Preparation Steps
  1. Combine chopped red onion, olive oil, balsamic vinegar, salt, and pepper. Set aside for 5 minutes.
  2. Chop tomatoes and place in a large bowl. Add minced garlic, basil, the onion-balsamic mixture, and season with salt and pepper to taste. Let sit for at least 10 minutes.
  3. Preheat grill to medium-high and oil the grates to prevent sticking.
  4. Season salmon fillets with salt and pepper. Place skin-side down on the grill, close lid, and cook for 8-10 minutes until just cooked through.
  5. Remove salmon and let rest for 2-3 minutes. Flake salmon and serve topped with the fresh tomato and basil mixture and diced avocado.
