  • 4 medium ripe tomatoes sliced
  • 0.25 cup red onion chopped
  • 2 tbsp extra virgin olive oil
  • 8 pieces kalamata olives
  • bunch fresh basil sliced
  • to taste kosher salt and fresh pepper

Method
 

Preparation Steps
  1. In a bowl combine red onion, olive oil, salt and pepper. Let it marinate about 5-10 minutes.
  2. Slice the tomatoes and arrange on a plate.
  3. Pour marinated mixture over tomatoes and top with sliced basil and olives.
  4. Divide equally in 4 plates and serve immediately.
