Preparation Steps
- Add the oil to a large pot over medium heat. Add in sausage and break it up with a wooden spoon. Cook for 5-7 minutes until no longer pink. Drain excess fat.
- Add onions and cook for 7 minutes until softened. Add garlic, oregano, salt, and red pepper flakes. Cook for another minute.
- Stir in tomato paste and cook for 1 minute.
- Add diced tomatoes with juices, chicken broth, and bay leaves. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes.
- Increase heat to medium-high. Add uncooked pasta and cook for 10 minutes until tender. Remove bay leaves.
- Stir in fresh basil. Season with salt and pepper to taste.
- Serve by adding a dollop of ricotta in each bowl. Top with soup and sprinkle with mozzarella cheese.

Optional garnishes include additional basil or grated Parmesan cheese.
