Preparation Steps
- In a medium heavy pot with a lid, heat olive oil on medium heat. Saute chopped scallions, cilantro, and minced garlic for about 2 minutes until tender.
- Add diced tomato and cook for another minute until soft.
- Add uncooked rice and sauté for 2 minutes, stirring frequently.
- Add water, bouillon cube, Sazon seasoning, and salt. Stir to combine.
- Bring mixture to a boil over high heat. Once boiling, lower heat to very low, cover, and cook for 15 minutes.
- After cooking, turn off heat and let it sit, covered, for at least 5 minutes. Fluff with a fork and serve.
Notes
This rice pairs well with grilled meats, seafood, or vegetarian dishes. Adjust seasoning to taste.
