  • 8 pieces corn tortillas
  • 8 tbsp pico de gallo
  • 4 oz diced avocado
  • 8 tsp lime roasted poblano cream
  • 1 tsp Old Bay seasoning
  • c cilantro or microgreens
  • 1 pieces lime wedge
  • 0.25 poblano pepper poblano pepper roasted and seeded
  • 1 cup light sour cream
  • 2 tbsp fresh lime juice
  • 0.125 tsp kosher salt
  • to taste black pepper

Preparation Steps
  1. Prepare the lime roasted poblano cream by blending all ingredients in a food processor until smooth.
  2. Season lobster meat with Old Bay seasoning and black pepper.
  3. Heat the tortillas over an open flame or in a skillet until warm and slightly charred.
  4. Assemble tacos by placing lobster meat in tortillas, topping with avocado, pico de gallo, a drizzle of poblano cream, and garnishing with cilantro or microgreens. Serve with lime wedges.
