Preparation Steps
- Preheat the oven to 350°F, and line a baking sheet with parchment paper or a baking mat.
- In a medium mixing bowl, beat together butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes.
- Add molasses, eggs, and vanilla; beat until well combined.
- Add flour, baking soda, salt, and cinnamon; stir to combine well.
- Add both kinds of oats and stir until combined.
- Mix in cranberries, coconut, pecans, milk chocolate chips, and white chocolate chips.
- With a large tablespoon, scoop dough and roll into balls; place 2.5 inches apart on the baking sheet.
- Bake for 10-12 minutes, until the top is no longer shiny.
- Allow cookies to cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Repeat with remaining dough. Enjoy warm or store in an airtight container for up to 3 days.
