  • 3 tablespoons maple syrup
  • 1 large egg
  • 0.5 cup all-natural creamy peanut butter
  • 1 teaspoon vanilla extract
  • 0.001 teaspoon pinch salt
  • 2 cups quick-cooking oats (gluten-free if desired)
  • 0.25 cup cocoa powder
  • 1 teaspoon baking soda
  • 0.5 cup semi-sweet chocolate chunks plus more for topping
  • 0.001 teaspoon flake salt for garnish

Method
 

Preparation Steps
  1. Preheat oven to 350°F and line baking sheet with parchment paper.
  2. Mix melted butter and brown sugar until smooth. Add maple syrup, egg, peanut butter, and vanilla, mixing well.
  3. Combine salt, oats, cocoa powder, and baking soda. Mix in chocolate chunks.
  4. Refrigerate dough for 15 minutes to set.
  5. Scoop dough into balls, place on baking sheet, and gently flatten.
  6. Repeat until 12 cookies are placed on sheet. Press additional chocolate chunks on top if desired.
  7. Bake for 11-14 minutes until edges crack. Cool on sheet briefly.
  8. Transfer to wire rack, sprinkle with flaky salt, and cool for at least 20 minutes to firm up.
