  • 1 cup butter (softened)
  • 1 cup brown sugar
  • 0.75 cup granulated sugar
  • 1 tablespoon molasses
  • 2 large eggs
  • 2 teaspoons vanilla
  • 2.5 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 1.5 teaspoons ground cinnamon
  • 1 cup quick oats
  • 1 cup old-fashioned oats
  • 0.666 cup dried cranberries
  • 0.333 cup shredded coconut
  • 0.333 cup chopped pecans or walnuts
  • 0.333 cup milk chocolate chips
  • 0.333 cup white chocolate chips

Method
 

Preparation Steps
  1. Preheat the oven to 350°F and line a baking sheet with parchment paper or a baking mat.
  2. In a medium mixing bowl, beat together butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes.
  3. Add the molasses, eggs, and vanilla, and beat until well combined.
  4. Add the flour, baking soda, salt, cinnamon, and stir to combine well.
  5. Add both kinds of oats and stir until combined.
  6. Stir in cranberries, coconut, pecans, milk chocolate chips, and white chocolate chips.
  7. Using 1 large tablespoon of dough, roll into balls and place on the prepared baking sheet about 2.5 inches apart.
  8. Bake for 10 minutes, or until the cookies are golden and no longer shiny on top.
  9. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Repeat with the remaining dough. Enjoy cookies warm or store in an airtight container for up to 3 days.
