  • 1 pound penne pasta cooked according to package instructions
  • 1 pound ground Italian sausage
  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 ribs celery diced
  • 1 medium carrot diced or thinly sliced
  • 4 cloves garlic finely diced
  • 28 ounces canned whole plum tomatoes such as San Marzano
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon thyme
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 15 ounces cannellini beans drained and rinsed
  • 0.5 cups dry white wine such as chardonnay or pinot grigio
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup Parmesan cheese grated
  • 1 cup shredded provolone cheese
  • 0.5 cups shredded mozzarella cheese

Method
 

Preparation Steps
  1. Preheat oven to 400F and prepare a casserole dish.
  2. Cook the penne pasta according to package instructions, drain and set aside.
  3. In a large skillet, sauté the sausage until browned. Remove and set aside.
  4. In the same skillet, add olive oil, then sauté onion, celery, and carrot until softened.
  5. Add garlic and cook for 1 minute until fragrant.
  6. Add tomatoes, tomato paste, herbs, salt, and pepper. Simmer for 10 minutes.
  7. Return sausage to skillet, add cannellini beans, and white wine. Simmer for 5 minutes.
  8. Prepare the béchamel sauce: melt butter, whisk in flour, then add milk and cook until thickened.
  9. Add Parmesan, provolone, and mozzarella cheeses to the béchamel. Stir until melted.
  10. Combine pasta with the sauce and meat mixture, then transfer to the casserole dish.
  11. Sprinkle shredded mozzarella on top and bake for 15 minutes until golden.
  12. Rest for 5 minutes before serving. Enjoy!
