Preparation Steps
- Preheat oven to 325°F. Line a 9-inch springform pan with parchment paper and grease the sides.
- Combine graham cracker crumbs, brown sugar, salt, and melted butter. Press into the bottom of the prepared pan. Bake for 10 minutes, then cool.
- In a large bowl, beat cream cheese, brown sugar, and flour until smooth. Mix in sour cream and vanilla. Add eggs one at a time, mixing slowly. Fold in toasted pecans.
- Pour batter into crust. Place in a water bath and bake for 1 hour 15 minutes. Turn off oven, leave door slightly open, and cool gradually. Refrigerate until firm.
- Make the praline topping: heat sugar and butter until melted and bubbling, cook to 220°F, then remove from heat and stir in additional pecans, salt, and vanilla. Cool and spread over cheesecake.
