  • 1.25 pounds boneless skinless chicken breasts
  • 2 teaspoons olive oil
  • 1 medium red onion
  • 0.25 cup cilantro
  • 1 poblano pepper poblano pepper
  • 1 roma tomato roma tomato
  • 1 lime lime
  • 1 teaspoon taco seasoning
  • 0.25 teaspoon kosher salt
  • 1 cup frozen or fresh corn kernels
  • 3 cups cooked brown rice
  • 0.25 cup cheddar-jack cheese
  • 0.25 cup sour cream or Greek yogurt
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon oregano

Method
 

Preparation Steps
  1. Dice the chicken into small pieces. Mix taco seasoning with chicken and set aside.
  2. Dice the red onion, roma tomato, and poblano pepper. Squeeze lime juice and combine to make pico de gallo.
  3. Heat olive oil in a skillet over medium-high heat. Cook chicken until browned, 2-3 minutes.
  4. Add remaining onion, poblano pepper, taco seasoning, water, and corn to the skillet. Cook until softened, 2-3 minutes.
  5. Divide cooked rice among bowls, top with chicken mixture, cheese, pico de gallo, and sour cream if desired.

Notes

Feel free to add avocado or beans for extra flavor.
