Preparation Steps
- Cut the beef chuck into 1.5-inch cubes and season with salt and pepper.
- Set the pressure cooker to 'saute' mode and heat vegetable oil. Sear the beef in batches until browned on all sides. Remove and set aside.
- Add diced onions, carrots, and celery to the pressure cooker. Cook for 3-4 minutes until softened.
- Return the browned beef to the pressure cooker. Add minced garlic and cook for 1 minute.
- Pour in beef broth and add cubed potatoes. Stir to combine.
- Close the lid, set the valve to 'sealing', and cook on high pressure for 35 minutes.
- Allow natural release for 10 minutes, then quick release remaining pressure.
- Open the lid, stir the stew, and thicken with a slurry of cornstarch and water if desired.
