  • 4 large eggs
  • 2 cups granulated sugar
  • 15 ounces pumpkin puree
  • 0.5 cup unsalted butter
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 2 teaspoons ground cinnamon
  • 0.5 cup light brown sugar
  • 0.25 cup milk
  • 0.5 cup unsalted butter softened
  • 3 cups powdered sugar
  • 0.5 cup chopped pecans
  • 24 pecan halves pecan halves

Method
 

Preparation Steps
  1. In a large mixing bowl, beat eggs, sugar, pumpkin, and melted butter until smooth. Add remaining ingredients and beat for 2-3 minutes until fully combined.
  2. Pour batter into a lightly greased 15x10x1 inch baking sheet. Bake at 350°F for 25-30 minutes.
  3. Remove from oven and cool completely before frosting.
  4. For the frosting, combine brown sugar, 2 Tbsp butter, and milk in a small saucepan over low heat. Whisk until sugar dissolves. Remove from heat and cool completely.
  5. In a large mixing bowl, beat 1/2 cup softened butter with powdered sugar. Pour in cooled brown sugar mixture. Beat for 3-4 minutes until light and fluffy. Fold in chopped pecans.
  6. Spread frosting over cooled pumpkin bars. Gently press pecan halves into the top of the bars. Cut and store in an airtight container in the refrigerator or freeze until ready to serve.

Notes

Feel free to add a drizzle of caramel or a sprinkle of cinnamon on top for extra flavor.
