Preparation Steps
  1. Preheat oven to 350F. Line an 8×8-inch pan with aluminum foil and spray with cooking spray.
  2. In a large bowl, whisk together eggs, sugar, pumpkin puree, oil, pumpkin pie spice, cinnamon, and vanilla.
  3. Add flour, baking powder, baking soda, and salt; stir until just combined.
  4. Fold in mini chocolate chips.
  5. Pour batter into prepared pan, smoothing the top. Bake for 36 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow cake to cool in the pan for at least 1 hour before slicing and serving.

Notes

This pumpkin cake can be topped with cream cheese frosting for added richness.
