  • 1 cup pumpkin puree
  • 1 tablespoon pumpkin pie spice
  • 4 large eggs
  • 0.5 cup whole milk
  • 0.33 cup vegetable oil
  • 1 box spice cake mix
  • 1 box instant pumpkin spice pudding mix

Preparation Steps
  1. Preheat oven to 375°F and line a cupcake pan with paper liners.
  2. In a large mixing bowl, combine pumpkin puree, pumpkin pie spice, eggs, milk, vegetable oil, spice cake mix, and pudding mix. Beat for 2-3 minutes until well combined.
  3. Fill cupcake liners about 2/3 full with batter.
  4. Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean. Allow to cool before frosting.
  5. Prepare whipped cream frosting by whipping heavy cream with powdered sugar until thick and fluffy.
  6. Once cupcakes are cooled, pipe frosting onto each cupcake and garnish with sprinkles or cinnamon.
