Preparation Steps
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Snap off the woody ends of the asparagus and place on the prepared baking sheet.
- Drizzle the asparagus with olive oil and toss to coat evenly.
- Sprinkle salt and pepper over the asparagus and toss again.
- Sprinkle half of the parmesan and lemon zest over the asparagus.
- Roast in the oven for 8 minutes. Then, sprinkle the remaining parmesan and lemon zest. Roast for an additional 2 to 4 minutes.
- Serve immediately with a squeeze of fresh lemon, if desired.
