  • 2 lb Yukon Gold potatoes
  • 2 tbsp light butter
  • 0.5 tsp garlic powder
  • 0.75 cup shredded reduced-fat Cheddar
  • 1 cup fat free milk
  • 1 bay leaf bay leaf
  • 0.125 tsp freshly grated nutmeg
  • 2 tsp thyme
  • 1 pinch salt & pepper

Method
 

Preparation Steps
  1. Preheat oven to 425°F.
  2. Spray a 11x7 inch baking dish with cooking spray.
  3. In a large bowl, combine sliced potatoes, melted butter, garlic powder, salt, and pepper.
  4. Arrange half of the potato slices in the prepared baking dish; sprinkle with half of the cheese. Repeat with remaining potatoes and cheese.
  5. In a small saucepan, bring milk, thyme, bay leaf, and nutmeg to a boil. Remove bay leaf and pour mixture over potatoes.
  6. Top with remaining cheese and bake uncovered for 45-50 minutes until potatoes are tender and bubbly.

Notes

Best served hot, garnished with fresh herbs if desired.
