Preparation Steps
- Preheat oven to 400°F.
- Boil sweet potatoes and garlic in salted water until soft. Drain and mash with chicken broth, milk, sour cream, salt and pepper.
- In a skillet, brown ground turkey about 5 minutes; season with salt and pepper. Set aside.
- Add olive oil, sauté onion until soft, then add celery, parsnip, salt and pepper; cook 12 minutes.
- Add garlic, mushrooms, flour, and mix well; cook 3-4 minutes.
- Add mixed vegetables, chicken broth, tomato paste, Worcestershire, rosemary, cooked turkey; simmer 5-10 minutes until thickened.
- Spread meat mixture in a baking dish; top with mashed sweet potatoes, decorate with ridges, sprinkle paprika.
- Bake 30-35 minutes until golden and heated through. Cool 10 minutes before serving.
