Preparation Steps
- Cut beef chuck into large chunks and season with salt and black pepper. Place in the slow cooker.
- Add chopped vegetables: carrots, potatoes, celery, and onion on top of the beef.
- In a bowl, whisk together beef broth and tomato paste, then pour over the ingredients in the slow cooker.
- Sprinkle dried thyme over the top, cover the slow cooker, and cook on low for 8 hours.
- Once cooked, shred the beef slightly with two forks and serve hot with extra broth if desired.
Notes
For a richer flavor, add a splash of red wine or a bay leaf during cooking.
