  • 8 pieces chicken thighs
  • 28 oz crushed tomatoes
  • 0.5 red bell pepper red bell pepper sliced into strips
  • 0.5 green bell pepper green bell pepper sliced into strips
  • 0.5 large onion sliced
  • 1 tsp dried oregano
  • 1 bay leaf bay leaf
  • to taste salt and pepper
  • 0.25 cup fresh herbs basil or parsley for topping

Method
 

Preparation Steps
  1. Season chicken thighs with salt and pepper. Place them in the slow cooker.
  2. Pour crushed tomatoes over the chicken. Add sliced onions and peppers on top. Sprinkle dried oregano and add bay leaf.
  3. Cover and cook on LOW for 8 hours or HIGH for 4 hours.
  4. Once cooked, remove bay leaf. Garnish with fresh herbs before serving.
