Preparation Steps
- Season the filet mignon steaks with salt and press the cracked pepper into both sides. Let sit at room temperature for 20 minutes.
- Heat olive oil in a skillet over medium-high heat. Sear the steaks for 6 minutes on each side until well browned.
- Add 2 tablespoons of butter, garlic cloves, and thyme to the pan. Cook for 5 minutes, spooning butter over steaks. Check for desired doneness (125°F-130°F).
- Remove steaks and set aside. Add remaining butter, shallot, garlic, and cognac to the skillet. Cook for 2 minutes, stirring.
- Lower heat and pour in heavy cream, simmer until thickened. Pour sauce over steaks. Garnish with parsley.
