Preparation Steps
- Heat oven to 400°F.
- Lightly spray olive oil in a medium nonstick skillet and heat on medium.
- Add onion, garlic, and cilantro and sauté for about 2 minutes. Add ground turkey, salt, garlic powder, and cumin. Cook until meat is fully cooked, about 4 to 5 minutes.
- Add 1/4 cup tomato sauce and 1/2 cup chicken broth. Mix well and simmer on low for about 5 minutes.
- Combine cooked rice and meat mixture.
- Cut the bell peppers in half lengthwise and remove seeds. Fill each with approximately 2/3 cup of the meat mixture. Place in a baking dish and top each with 1 tablespoon of cheese.
- Pour remaining chicken broth into the dish. Cover tightly with aluminum foil and bake for about 45 minutes until peppers are tender.
- Remove foil and serve immediately.
