Preparation Steps
- Preheat oven to 400°F.
- Lightly spray olive oil in a medium nonstick skillet and heat over medium heat.
- Add onion, garlic, and cilantro; sauté about 2 minutes. Add ground turkey, salt, garlic powder, and cumin; cook for 4-5 minutes until meat is cooked through.
- Add 1/4 cup tomato sauce and 1/2 cup chicken broth; mix well and simmer on low for 5 minutes.
- Combine cooked rice with the cooked meat mixture.
- Cut the bell peppers in half lengthwise, remove seeds. Stuff each half with 2/3 cup of the meat mixture and place in a baking dish. Top each with 1 tablespoon cheese.
- Pour remaining chicken broth into the pan. Cover with aluminum foil and bake for 45 minutes until peppers are tender.
- Remove foil and serve hot.
