Preparation Steps
- Cook sweet potatoes until soft, either in oven or boiling them. Let them cool slightly.
- Peel and place sweet potatoes in a mixing bowl. Add brown sugar, salt, vanilla, eggs, and melted butter. Mix until well combined.
- Transfer the mixture into a greased baking dish and smooth the surface.
- Bake at 350°F for 30 minutes. Remove from oven, sprinkle mini marshmallows on top, and return to oven for an additional 10 minutes until golden brown.
