  • 1 large head green cabbage
  • 0.25 cup olive oil
  • 1 tsp salt
  • 1 tbsp taco seasoning (chili powder, onion powder, garlic powder, paprika, cumin, dried oregano)
  • 1 small sweet onion, diced
  • 1 lb ground turkey
  • 14 oz black beans, rinsed and dried
  • 4 oz shredded mexi blend cheese
  • 1 large avocado, diced
  • 8 oz cherry tomatoes, sliced
  • 3 tbsp cilantro, chopped
  • 0.5 cup Greek yogurt
  • 0.5 large lime, juiced and zested
  • 1 tsp honey
  • 2 tbsp milk (for thinning)

Method
 

Preparation Steps
  1. Preheat your oven to 425℉. Line a large rimmed baking sheet with parchment paper.
  2. Keep your cabbage core INTACT, slice it in half first, then into thick slices, ending up with 6-7 slices. Place them on the baking tray and brush both sides with olive oil. Season with salt and sprinkle with taco seasonings. Roast for 30-35 minutes until golden.
  3. In a large skillet, heat olive oil and sauté diced onion for 2 minutes. Add ground turkey, break it apart, cook until no longer pink, season with salt and taco seasonings, and give it some color. Use to top roasted cabbage slices, sprinkle with cheese, and bake until cheese melts, about 5 minutes.
  4. Top the cabbage steaks with beans and shredded cheese, bake until cheese melts, about 5 minutes. Remove from oven and garnish with sliced tomatoes, diced avocado, and chopped cilantro.
  5. Whisk together Greek yogurt, lime juice and zest, honey, and thin with milk to desired consistency for crema.
