  • 1 head green cabbage
  • 0.25 cup olive oil
  • 1 tsp salt
  • 1 tbsp taco seasoning chili powder, onion powder, garlic powder, paprika, cumin, dried oregano
  • 1 small sweet onion diced
  • 1 lb ground turkey
  • 14 oz black beans rinsed and dried
  • 4 oz shredded mexi blend cheese

Method
 

Preparation Steps
  1. Preheat oven to 425°F. Slice cabbage into 6-7 thick steaks, keeping core intact, brush with olive oil, season with salt and spices. Roast for 30-35 minutes until golden.
  2. In a skillet, heat olive oil, sauté diced onion for 2 minutes, add ground turkey, break it apart, cook until no longer pink. Season with salt and spices. Use as topping for cabbage steaks and sprinkle with cheese, bake until melted, about 5 minutes.
  3. Top roasted cabbage steaks with beans, cheese, tomatoes, avocado, and cilantro. Serve with optional lime and yogurt crema.
