taco cabbage steaks

A delicious vegetarian twist on traditional tacos using cabbage steaks topped with spicy meat or veggies.

Ingredients

  • 1 head green cabbage
  • 0.25 cup olive oil
  • 1 tsp salt to taste
  • 1 tbsp taco seasoning chili powder, onion powder, garlic powder, paprika, cumin, dried oregano
  • 1 small sweet onion diced
  • 1 lb ground turkey or any ground meat you prefer
  • 14 oz black beans rinsed and dried
  • 4 oz shredded mexi blend cheese
  • 1 large avocado diced
  • 8 oz cherry tomatoes sliced
  • 3 tbsp cilantro chopped
  • 0.5 cup Greek yogurt
  • 0.5 large lime juiced and zested
  • 1 tsp honey
  • 0.25 cup milk for thinning

Method
 

Preparation Steps
  1. Preheat your oven to 425℉. Line a large rimmed baking sheet with parchment paper.
  2. Keep your cabbage core INTACT, slice your cabbage in half first then into thick slices - ending up with 6-7 slices. Place them on your baking tray and brush both sides of each slice with olive oil. Season with salt to taste and sprinkle with the seasonings listed to taste. Don't be shy - give it some color! Roast in your oven for 30-35 minutes or until golden.
  3. In a large skillet, heat your oil and then sauté your onion for 2 minutes. Add in the ground meat and cook until no longer pink. Season with salt and seasonings generously. Use to top the roasted cabbage slices and sprinkle with cheese. Return to oven until cheese melts, about 5 minutes.
  4. If using beans, top the cabbage steaks with beans and cheese. Bake until cheese melts, about 5 minutes.
  5. Top with sliced tomatoes, diced avocado, and chopped cilantro.
  6. Whisk together Greek yogurt, lime juice and zest, honey, and thin with milk to desired consistency to make crema.
