  • 1.25 lbs boneless skinless chicken breasts diced into 1-inch cubes
  • 1 Tbsp olive oil
  • 0.25 cup low-sodium soy sauce
  • 0.25 cup water
  • 2 Tbsp honey
  • 1.5 Tbsp packed light brown sugar
  • 1 Tbsp rice vinegar
  • 0.25 tsp toasted sesame oil
  • 2 tsp peeled and minced fresh ginger
  • 2 tsp peeled and minced fresh garlic (2 cloves)
  • 2 tsp cornstarch
  • Sesame seeds and chopped green onions for serving (optional)

Method
 

Preparation Steps
  1. Heat olive oil in a 12-inch non-stick skillet over medium-high heat.
  2. Add chicken and cook for 3-4 minutes until browned on the bottom, then flip and cook until the internal temperature reaches 160°F, about 3 minutes longer.
  3. While chicken is cooking, whisk together soy sauce, water, honey, brown sugar, rice vinegar, sesame oil, ginger, garlic, and cornstarch in a small bowl.
  4. Pour the sauce into the skillet with the cooked chicken and stir to coat. Continue cooking for 30-60 seconds until the sauce thickens.
  5. Transfer to serving platter and garnish with sesame seeds and chopped green onions, if desired.

Notes

Serve with steamed rice or vegetables for a complete meal.
