  • 0.5 pound sushi grade tuna
  • 0.25 cup sliced scallions
  • 2 tablespoons reduced sodium soy sauce
  • 1 teaspoon sesame oil
  • 0.5 teaspoon sriracha
  • 2 tablespoons light mayonnaise
  • 2 teaspoons sriracha sauce
  • 1 cup cooked short grain white rice
  • 0.5 medium Hass avocado
  • 1 cup diced cucumber
  • 1 teaspoon black sesame seeds

Method
 

Preparation Steps
  1. In a small bowl, combine mayonnaise and sriracha. Thin with a little water to drizzle.
  2. In a medium bowl, mix tuna cubes with scallions, soy sauce, sesame oil, and sriracha. Gently toss to combine and set aside.
  3. Layer 1/2 cup rice, tuna mixture, sliced avocado, diced cucumber, and sliced scallions in bowls.
  4. Drizzle spicy mayo over the bowls and sprinkle with black sesame seeds. Serve with extra soy sauce if desired.
