Preparation Steps
- Preheat the oven to 350°F. Line three 8-inch cake pans with parchment paper and grease the sides.
- Beat the butter and sugar until light and fluffy, about 2 minutes.
- Add egg whites and vanilla extract, and beat until combined.
- In a separate bowl, whisk together flour, baking soda, and baking powder.
- Add dry ingredients to the wet mixture in three parts, alternating with milk, starting and ending with dry ingredients. Mix until just combined.
- Divide batter evenly among pans and smooth the tops.
- Bake for 30-33 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from oven and cool in pans for 5 minutes, then transfer to a wire rack to cool completely.
- Frost and assemble the cake as desired.
