Preparation Steps
- Preheat the oven to 350F. Grease a 9x5-inch loaf pan and set aside.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, beat sugar, eggs, vegetable oil, and vanilla extract until well combined.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in grated zucchini and blueberries if using.
- Pour batter into prepared loaf pan. Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
- Allow bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
This zucchini bread can be enhanced with nuts or chocolate chips if desired.
